Crock Pot Sausage Breakfast Casserole

My verdict: Meh

Meh. I made this twice – once for work and then Christmas morning. It was enjoyable but nothing special. The second time I added double the amount of sausage and added extra eggs (egg whites to be exact). I think it was slightly overcooked so I am going to cut the cooking time by about 30-45 minutes if I try this recipe again.

  • 1 Package Frozen Shredded Hash Browns (26-32oz)
  • 1 Package Jimmy Dean┬« Hearty Original Sausage Crumbles
  • 2 cups Shredded Mozzarella Cheese
  • 1/2 cup Shredded Parmesan Cheese
  • 1/2 cup Julienne Cut Sun Dried Tomatoes (packed in oil, drained)
  • 6 Green Onions (sliced)
  • 12 Eggs
  • 1/2 cup Milk
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Ground Black Pepper


Website Tip: Substitute 1 cup chopped fresh tomato for sun dried tomatoes, if desired.

I prepared this for a work function and it turned out really good, but next time l will increase the amount of cheese and use 2 packages of sausage instead of 1 (I also used turkey sausage instead of regular).


Step 1 Spray a 6 quart slow cooker with cooking spray. Layer 1/2 of the potatoes on the bottom of slow cooker.
Step 2 Top with half of the sausage, mozzarella and Parmesan cheese, sun dried tomatoes and green onion. Repeat layering.
Step 3 Beat eggs, milk salt and pepper in large bowl with a wire whisk until well blended. Pour evenly over potato-sausage mixture.
Step 4 Cook on low setting for 8 hours or on high setting for 4 hours or until eggs are set.
