Outside-In Bacon Cheeseburgers with Green Onion Mayo

My verdict: Thumbs Up

These burgers were so yummy! They were a little hard to form, but if you keep the meat cold it will work better. We used yellow cheddar and cooked the burgers on the grill instead of stove top. I doubled the recipe for a large cookout but that made way too much of the mayo and stuffing (either that or my math was really off that day!). Definite crowd pleaser.

Outside-In Bacon Cheeseburgers with Green Onion Mayo

Serves 6

Ingredients

  • 6 - 8 Slices Bacon (chopped)
  • 4 Scallions (cleaned & trimmed)
  • 1.75lb Ground Beef / Sirloin
  • 1.5 tablespoons Worcestershire Sauce
  • 1.5 tablespoons Montreal Steak Seasoning (McCormick)
  • 3/4lb Extra-Sharp White Cheddar Cheese (crumbled)
  • 1 cup Mayonnaise
  • 1 teaspoon Ground Cumin
  • 6 Crusty Kaiser rolls (split)
  • 6 Leaves Crisp Lettuce
  • Extra-Virgin Olive Oil (for drizzling)

Note

We used yellow cheddar and cooked the burgers on the grill instead of stove top. Everyone raved about them!

Directions

Step 1 Preheat grill pan over high heat.
Step 2 In a medium pan, brown bacon and drain on a paper towel-lined plate.
Step 3 Brush scallions with a little evoo and grill on hot grill pan 2 or 3 minutes on each side. Remove from heat to cool.
Step 4 Combine ground beef with Worcestershire and steak seasoning. Divide meat into 6 equal parts. Combine cheese crumbles and cooked bacon. Take a portion of the ground meat in your hand and make a well in the center. Pile in the cheese and bacon, then carefully form the burger around the filling. Make sure the fillings are completely covered with meat. When all 6 patties are formed, drizzle burgers with evoo and place on a hot grill pan. Cook 2 minutes on each side over high heat, reduce heat to medium-low and cook burgers 7 or 8 minutes longer, turning occasionally. Do not press down on burgers as they cook. Transfer to a plate and let them rest 5 minutes before serving.
Step 5 Make the mayonnaise: Chop cooled, grilled green onions and add to a food processor. Add mayonnaise and cumin and pulse-grind together. Season with salt and pepper to taste.
Step 6 Place burgers on bun and top with lettuce and a slather of green onion mayonnaise.
