Sausage & Peppers

  • 4 Links Lean Italian Turkey Sausage
  • 7 cloves Garlic (thinly sliced)
  • 1 Medium Onion (sliced into 1/4-inch thick strips)
  • 1 Red Pepper (sliced into 1/2-inch thick strips)
  • 1 Sweet Cubanelle Pepper (sliced into 1/2-inch thick strips)
  • 1/4 cup No Sodium, No Sugar Added Canned Chopped Tomatoes
  • Salt & Freshly Ground Black Pepper
  • 4 Whole Wheat Hot Dog Rolls


Step 1 Preheat broiler. Lightly coat a large non-stick skillet with cooking spray and heat over medium-high. Add sausage and cook for 2 minutes per side, or until browned. Remove from heat and let rest on a plate.
Step 2 Reduce heat to medium and add garlic. Cook for 1 minute, or until garlic starts to brown, then add onion and both types of peppers. Cook for 8 minutes or until peppers are softened. Mix in tomatoes and bring to a simmer. Return sausages to pan and heat for 5 minutes or until they are fully cooked. Season lightly with salt and pepper and turn off heat.
Step 3 Cut open hot dog rolls and toast under broiler until lightly browned. Divide rolls among 4 plates, place a link of sausage on each, top with pepper and onion mixture, and serve immediately.
