Steak Salad With Roasted Red Pepper Relish

Serves 4
Cook time 20 minutes


  • 2 tablespoons Olive Oil (plus 1 Teaspoon)
  • 1-1/2lb Skirt Steak (cut into 4 pieces)
  • Kosher Salt & Black Pepper
  • 1/2 cup Roasted Red Pepper (chopped)
  • 2 Scallions (thinly sliced)
  • 2 tablespoons Red Wine Vinegar
  • 1 tablespoon Fresh Flat-leaf P (chopped)
  • 5oz Mixed Greens


Step 1 Heat 1 teaspoon of the oil in a large skillet over medium-high heat. Season the steak with ½ teaspoon salt and ¼ teaspoon black pepper and cook, 3 to 5 minutes per side for medium-rare. Let rest for 5 minutes before slicing.
Step 2 Meanwhile, in a small bowl, mix together the roasted red peppers, scallions, vinegar, parsley, the remaining 2 tablespoons of oil, and ¼ teaspoon each salt and black pepper.
Step 3 Serve the steak and greens topped with the red pepper relish.
