Easy Cheesy Chicken Casserole

  • 3 cups Chicken Broth
  • 1 can Black Beans (15oz) (drained and rinsed)
  • 1 can Corn (15oz) (drained)
  • 1 1/3 cup Whole-Grain Brown Rice (uncooked)
  • 2 cups Shredded Monterey Jack Cheese (divided)
  • 1 can Cream of Chicken Soup (10 3/4oz)
  • 1/2 cup Sour Cream
  • 1/2 cup Salsa Verde
  • 2lb Boneless Skinless Chicken (cut into 1/2-inch pieces)


Recipe calls for 2lbs of chicken thighs, but I imagine chicken breasts can be used as well. Also, the heat index of the dish will be determined by the salsa verde used.


Step 1 Preheat oven to 350┬║. Spray a 13x9-inch baking dish with nonstick cooking spray. In a small saucepan, heat chicken broth.
Step 2 In a large bowl, combine beans, corn and rice. Add hot chicken broth, 1 cup cheese, soup, sour cream and salsa; stirring to combine. Stir in chicken. Pour mixture into prepared baking dish.
Step 3 Bake, uncovered, for 45 minutes. Top with remaining 1 cup cheese and bake for 15 - 25 minutes longer or until center is set and cheese is golden brown.
